Ingredients

  • medium to large sweet potatoes
  • shredded cooked chicken breast
  • salsa verde
  • canned black beans, rinsed and drained
  • frozen corn
  • shredded Monterey Jack cheese
  • shredded cheddar cheese
  • Mexican blend cheese
  • fresh cilantro, chopped
  • diced avocado
  • guacamole
  • sour cream
  • plain Greek yogurt
  • lime juice
  • cumin
  • chili powder
  • garlic powder
  • salt
  • pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Thoroughly wash the sweet potatoes and pat them dry. Using a fork, pierce each sweet potato several times all over.
  3. Place the pierced sweet potatoes directly on an oven rack and bake for 45-60 minutes, or until they are very tender.
  4. If short on time, microwave the sweet potatoes one at a time on high for 5-8 minutes until tender.
  5. If you don't have pre-cooked chicken, poach chicken breasts in simmering water for 15-20 minutes until cooked through, then shred it.
  6. In a medium bowl, combine the shredded chicken, salsa verde, black beans, and corn. Stir until well coated.
  7. Taste the mixture and add any additional seasoning like cumin, chili powder, or garlic powder.
  8. Once the sweet potatoes are tender, carefully remove them from the oven and make a lengthwise slit down the center of each.
  9. Gently open up each sweet potato and fluff the flesh inside with a fork.
  10. Spoon a generous amount of the salsa verde chicken mixture into each sweet potato cavity.
  11. If using, sprinkle the shredded cheese over the top of the chicken filling.
  12. Return the stuffed sweet potatoes to the oven for another 5-10 minutes until the cheese is melted and bubbly.
  13. Garnish with fresh cilantro, diced avocado, guacamole, and a dollop of sour cream or Greek yogurt. Serve immediately.
