Instructions
- Preheat your oven to 325°F (160°C). This ensures that your cheesecake cooks evenly.
- In a mixing bowl, combine 1 ½ cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/3 cup of melted butter. Mix until the crumbs are fully coated. Press this mixture firmly into the bottom of a greased 9×9-inch baking pan to form an even layer.
- Place the crust in the preheated oven and bake for about 10 minutes, or until it’s lightly golden. Remove from the oven and let it cool while preparing the filling.
- In a large mixing bowl, beat 2 (8 oz) packages of softened Philadelphia cream cheese with 1 cup of granulated sugar until smooth and creamy. Add in 2 large eggs, 1 teaspoon of pure vanilla extract, and beat until fully incorporated.
- Pour the cream cheese filling over the cooled graham cracker crust, spreading it evenly with a spatula.
- Return the pan to the oven and bake for 25-30 minutes, or until the edges are set, and the center is slightly jiggly. It will firm up as it cools.
- Once baked, remove the pan from the oven and let it cool at room temperature for about an hour. After that, refrigerate for at least 4 hours, or overnight for best results.
- Once chilled, lift the cheesecake bars out of the pan using the edges of the parchment paper. Cut into squares and serve. Optionally, top with fresh fruit, whipped cream, or a drizzle of chocolate sauce.
