Description

Indulge in these creamy Philadelphia Cheesecake Bars that combine a rich filling with a perfectly crumbly graham cracker crust. Perfect for gatherings or a sweet treat at home, these bars are sure to impress!

Ingredients

Scale
  • 2 (8 oz) packages of Philadelphia cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 1/3 cup melted butter

Instructions

  1. Preheat your oven to 325°F (160°C). This ensures that your cheesecake cooks evenly.
  2. In a mixing bowl, combine 1 ½ cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/3 cup of melted butter. Mix until the crumbs are fully coated. Press this mixture firmly into the bottom of a greased 9×9-inch baking pan to form an even layer.
  3. Place the crust in the preheated oven and bake for about 10 minutes, or until it’s lightly golden. Remove from the oven and let it cool while preparing the filling.
  4. In a large mixing bowl, beat 2 (8 oz) packages of softened Philadelphia cream cheese with 1 cup of granulated sugar until smooth and creamy. Add in 2 large eggs, 1 teaspoon of pure vanilla extract, and beat until fully incorporated.
  5. Pour the cream cheese filling over the cooled graham cracker crust, spreading it evenly with a spatula.
  6. Return the pan to the oven and bake for 25-30 minutes, or until the edges are set, and the center is slightly jiggly. It will firm up as it cools.
  7. Once baked, remove the pan from the oven and let it cool at room temperature for about an hour. After that, refrigerate for at least 4 hours, or overnight for best results.
  8. Once chilled, lift the cheesecake bars out of the pan using the edges of the parchment paper. Cut into squares and serve. Optionally, top with fresh fruit, whipped cream, or a drizzle of chocolate sauce.
