Ingredients

  • Cherry or Grape Tomatoes
  • Fresh Mozzarella Balls (Bocconcini or Ciliegine)

  • Balsamic Glaze

  • Optional: Cured Beef Slices or Deli Beef

Instructions

  1. Cook the Tortellini: Bring a pot of salted water to a rolling boil. Add your refrigerated cheese tortellini and cook according to package directions, usually 2-3 minutes until they float and are tender. Drain the tortellini thoroughly and rinse them under cold water to stop the cooking process. Let them cool completely.
  2. Prepare Your Ingredients: While the tortellini cools, wash your cherry or grape tomatoes and pat them dry. Drain your fresh mozzarella balls well. Gently separate your fresh basil leaves from the stems. If using optional cured beef, prepare it by rolling or folding into small pieces.
  3. Assemble the Skewers: Use 6-inch wooden skewers. Start with a cooled tortellini, followed by a fresh basil leaf, a cherry tomato, and a mozzarella ball. If adding cured beef, thread it next. Repeat the sequence until the skewer is full, leaving space at the bottom and top.
  4. Drizzle and Pack: Arrange the assembled skewers in snack pack containers. Drizzle each skewer with balsamic glaze and extra virgin olive oil. Sprinkle lightly with salt and black pepper.
