- 1 teaspoon smoked paprika
- Cayenne pepper or red pepper flakes (to taste)
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 tablespoon lemon juice or apple cider vinegar
- 1 tablespoon Worcestershire sauce
- Salt (to taste)
- Black pepper (to taste)
- 1 tablespoon olive oil or neutral cooking oil
Instructions
- Pat the chicken pieces dry with paper towels and cut them into roughly 1-inch bite-sized pieces.
- In a medium bowl, toss the chicken with salt, black pepper, onion powder, and garlic powder. Set aside.
- Melt the unsalted butter in a small saucepan over low heat.
- Add minced garlic, smoked paprika, cayenne pepper (or red pepper flakes), remaining garlic powder, and onion powder to the melted butter. Stir together.
- Let the mixture simmer on low heat for 2-3 minutes, stirring occasionally.
- Remove from heat and stir in chopped parsley, chives, Worcestershire sauce, and lemon juice or apple cider vinegar. Adjust seasoning if needed.
- Heat a large skillet over medium-high heat and add olive oil.
- Add the chicken pieces in a single layer and cook undisturbed for 3-4 minutes per side until golden brown and cooked through.
- Transfer cooked chicken to a plate and repeat with any remaining chicken.
- Return all cooked chicken to the skillet or a serving bowl and pour the Cowboy Butter over the chicken.
- Toss gently until every piece is coated in the butter sauce. Serve immediately.
