Description

These Easy Lemon Brownies are a bright and zesty twist on traditional brownies, delivering a refreshing lemon punch in every bite. Perfect for any occasion, they’re simple to make and utterly addictive!

Ingredients

Scale
  • 1 cup All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1/2 cup Unsalted Butter
  • 2 Large Eggs
  • Zest of 2 Fresh Lemons
  • 1/4 cup Fresh Lemon Juice
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 cup Powdered Sugar (Confectioners' Sugar) for Glaze
  • Additional Fresh Lemon Juice for Glaze

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides. Spray the parchment with non-stick cooking spray.
  2. In a medium microwave-safe bowl or a small saucepan over low heat, melt the unsalted butter completely. Set it aside to cool slightly.
  3. In a large mixing bowl, combine the melted butter with the granulated sugar. Whisk until well combined and smooth. Add the large eggs, one at a time, whisking well after each addition until fully incorporated.
  4. Add the fresh lemon zest and fresh lemon juice to the wet mixture. Whisk gently until everything is combined.
  5. In a separate small bowl, whisk together the all-purpose flour, baking powder, and salt until there are no lumps.
  6. Gradually add the dry ingredient mixture to the wet mixture in the large bowl. Use a spatula or wooden spoon to gently fold until just combined.
  7. Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes until the edges are set and a toothpick inserted into the center comes out with moist crumbs.
  8. Remove the pan from the oven and let the brownies cool completely in the pan on a wire rack.
  9. In a small bowl, whisk together the powdered sugar and fresh lemon juice until smooth and lump-free. Adjust the consistency as needed.
  10. Once the brownies are completely cool, lift them out of the pan using the parchment paper overhang. Drizzle or spread the lemon glaze evenly over the top and let it set for 10-15 minutes before slicing into squares.
