  • 2 cups cooked, shredded chicken
  • Beef bacon (to taste)
  • 1 packet dry ranch seasoning mix
  • 8 oz full-fat cream cheese
  • 2 cups shredded cheddar cheese
  • 4 cups chicken broth
  • 1/2 cup heavy cream or whole milk
  • 1 onion, chopped
  • 3 cloves garlic, minced

Instructions

  1. Cook the beef bacon in a large pot or Dutch oven over medium heat until crispy. Remove the bacon and place it on a paper towel-lined plate to drain, then crumble it into small pieces. Pour off all but about two tablespoons of the bacon fat from the pot.
  2. Add the chopped onion to the pot with the reserved bacon fat and sauté over medium heat for about 5-7 minutes until the onion softens and becomes translucent. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Stir in the dry ranch seasoning mix until fully dissolved.
  4. Bring the mixture to a gentle simmer. Once simmering, add the cooked and shredded chicken to the pot and let it heat through for a few minutes.
  5. Reduce the heat to low and cut the cream cheese into smaller cubes. Add the cream cheese to the soup, stirring continuously until completely melted and smooth.
  6. Slowly add the shredded cheddar cheese, a handful at a time, stirring constantly until each addition is melted and smooth.
  7. If the soup is thicker than desired, thin it out with a splash of heavy cream or milk. Taste and adjust seasonings as needed.
