Ingredients
Scale
- 1 lb ground beef (80/20 lean-to-fat ratio)
- Beef bacon strips
- Sweet onions (Vidalias or Walla Wallas)
- 2 tablespoons butter
- Salt
- Freshly ground black pepper
- Cheese slices (American, sharp cheddar, smoked gouda, or Swiss)
- Burger buns (brioche or potato buns)
- Balsamic vinegar or apple cider vinegar
- Beef broth (optional)
Instructions
- Thinly slice your onions to about 1/8-inch thick.
- In a large, heavy-bottomed skillet or Dutch oven, melt 2 tablespoons of butter over medium-low heat. Add the sliced onions and a pinch of salt. Stir to coat.
- Cover the skillet and cook for 15-20 minutes, stirring occasionally, until the onions have softened and released their moisture.
- Uncover, reduce the heat to low, and continue to cook, stirring every 5-10 minutes, for 45-60 minutes, or until the onions are deep golden brown and jammy.
- If the onions start to stick or dry out, add a tablespoon of water, balsamic vinegar, apple cider vinegar, or beef broth to deglaze the pan.
- While the onions are caramelizing, place the beef bacon strips in a cold skillet. Cook over medium heat, turning occasionally, until crispy, about 8-12 minutes.
- Transfer the cooked beef bacon to a plate lined with paper towels to drain excess fat.
- Gently divide the ground beef into four equal portions and form each portion into a patty about 1/2-inch thick.
- Press a shallow indentation into the center of each patty and season both sides with salt and freshly ground black pepper.
- Heat your skillet over medium-high heat or preheat your grill to medium-high.
- Place the seasoned patties in the hot skillet or on the grill. Cook for 3-5 minutes per side for medium-rare, or longer for desired doneness.
- During the last minute of cooking, place a slice of cheese on each patty and cover briefly to help the cheese melt.
- Transfer the cheeseburgers to a plate and let them rest for a couple of minutes.
- Lightly butter or brush the cut sides of your burger buns with olive oil and toast them in a skillet or on the grill for 1-2 minutes until golden brown.
- To assemble, place the bottom bun on your plate, add a beef cheeseburger patty, a spoonful of caramelized onions, a few strips of crispy beef bacon, and crown it with the top bun.

Keywords: Patience is key for caramelizing onions; low and slow heat is essential. Don't overwork the beef when forming patties, and always toast your buns for added texture.
