Instructions
- Pat your beef chuck roast completely dry with paper towels and season generously with salt, black pepper, garlic powder, onion powder, and smoked paprika.
- Heat about 2 tablespoons of olive oil in a large Dutch oven or oven-safe pot over medium-high heat until shimmering. Sear the beef on all sides until deeply browned, about 3-5 minutes per side, then set aside.
- Reduce heat to medium, drain excess fat if necessary, and add a chopped yellow onion and minced garlic to the pot. Sauté for 3-5 minutes until softened.
- Deglaze the pot with 1 cup of beef broth, 2 tablespoons of Worcestershire sauce, and 1 tablespoon of apple cider vinegar. Bring to a simmer and stir in about 1/2 cup of BBQ sauce.
- Return the seared beef to the pot, ensuring the liquid comes halfway up the sides of the roast. Cover tightly and simmer on the stovetop.
- For the oven method, transfer to a preheated oven at 300°F (150°C) and cook for 3-4 hours until fork-tender. For the slow cooker method, cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the beef into bite-sized pieces and return it to the pot with the cooking liquid. Stir in another 1/2 cup to 1 cup of BBQ sauce until well coated.
- For the caramelized onions, peel and thinly slice the sweet onions. In a skillet, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium-low heat.
- Add the sliced onions and a pinch of salt, cooking slowly for 30-45 minutes until they turn golden-brown and jammy. Optionally, add a splash of apple cider vinegar or a pinch of sugar towards the end.
- To assemble the sliders, slice the buns in half horizontally. Optionally toast the cut sides in a skillet.
- Layer the bottom halves of the buns with a generous spoonful of BBQ pot roast, a slice of cheese, and a dollop of caramelized onions.
- Top with the other half of the bun and optionally bake in a preheated oven at 350°F (175°C) for 5-10 minutes until the cheese melts.
- Serve immediately with any optional toppings.
