These Thai Peanut Chicken Skewers are grilled to juicy perfection and served with a creamy, flavor-packed peanut sauce! For the Chicken & Marinade:

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

  • 2 tbsp soy sauce

  • 1 tbsp fish sauce

  • 1 tbsp brown sugar

  • 1 tbsp lime juice

  • 1 tbsp vegetable oil

  • 2 garlic cloves, minced

  • 1/2 tsp ground coriander

  • 1/2 tsp ground turmeric

  • 1/4 tsp black pepper

  • Bamboo or metal skewers

For the Peanut Sauce:

  • 1/2 cup creamy peanut butter

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp lime juice

  • 1 tbsp brown sugar or honey

  • 1 garlic clove, grated

  • 1/2 tsp grated fresh ginger (optional)

  • 1/2 tsp sriracha (optional)

  • 1/41/3 cup warm water (to thin sauce)


Instructions

  • Marinate the Chicken: In a medium bowl, whisk together marinade ingredients. Add chicken pieces and toss to coat. Cover and refrigerate for at least 1 hour, up to 8 hours.

  • Prepare Skewers: If using bamboo skewers, soak them in water for 30 minutes. Thread marinated chicken onto skewers.

  • Make Peanut Sauce: In a bowl, whisk together all sauce ingredients except water. Add warm water slowly until you reach a creamy, dippable consistency. Set aside.

  • Grill the Chicken: Preheat grill or grill pan over medium-high heat. Lightly oil the surface. Grill skewers 4–5 minutes per side, or until chicken is cooked through and slightly charred.

 

  • Serve: Plate skewers hot with peanut sauce on the side or drizzled on top. Add lime wedges for extra flavor!

Notes

  • Chicken thighs stay juicier, but chicken breasts work fine too.

  • Don’t skip the marinating step—it really boosts flavor.

  • Extra peanut sauce makes a great dip for veggies or dressing for noodles.

  • No grill? Use a broiler or grill pan instead.

 

  • Want a little heat? Add extra sriracha to the peanut sauce!
