  • 1 tablespoon Baking Powder (aluminum-free)
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • Olive Oil or Avocado Oil (for drizzling)
  • ½ cup Pineapple Preserves or well-drained Crushed Pineapple
  • ½ cup Cowboy Candy Syrup
  • ¼ cup finely chopped Cowboy Candy (Candied Jalapeños)
  • ¼ cup Brown Sugar
  • 2 tablespoons Apple Cider Vinegar
  • 2 tablespoons Soy Sauce (or Tamari)
  • 1 tablespoon Fresh Garlic (minced)
  • 1 teaspoon Fresh Ginger (grated, optional but recommended)
  • ½ teaspoon Sriracha or Red Pepper Flakes (optional)

Instructions

  1. Pat the chicken wings extremely dry with paper towels.
  2. In a large bowl, toss the dried wings with a light drizzle of olive or avocado oil.
  3. Sprinkle the wings evenly with baking powder, salt, black pepper, garlic powder, onion powder, and smoked paprika. Toss well to coat.
  4. Arrange the seasoned wings in a single layer on a wire rack set over a baking sheet.
  5. Preheat the oven to 400°F (200°C).
  6. Bake the wings for 45-55 minutes, flipping halfway through, until golden brown and crispy.
  7. While the wings are baking, prepare the glaze by combining pineapple preserves, cowboy candy syrup, chopped cowboy candy, brown sugar, apple cider vinegar, soy sauce, minced garlic, and grated ginger in a medium saucepan.
  8. Bring the mixture to a gentle simmer over medium heat, stirring occasionally.
  9. Once simmering, reduce the heat to low and cook for about 8-10 minutes until the glaze thickens.
  10. Remove the glaze from heat and set aside.
  11. Transfer the cooked wings to a large bowl.
  12. Pour the warm glaze over the wings and toss gently to coat.
  13. For extra caramelization, arrange the glazed wings back on the wire rack and broil for 2-3 minutes, watching carefully.
