  • 2 cups Fresh Strawberries
  • 12 tablespoons Granulated Sugar
  • Zest of half a Lemon
  • 12 teaspoons Lemon Juice
  • 8 ounces Mascarpone Cheese
  • 23 tablespoons Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • Fresh Mint Leaves
  • Balsamic Glaze (Optional)
  • Unsalted Butter (for toasting)

Instructions

  1. Wash about 2 cups of fresh strawberries gently under cool water.
  2. Hull the strawberries and slice them into uniformly thin pieces, about 1/4 inch thick.
  3. Place the sliced strawberries in a medium-sized bowl. Add 1-2 tablespoons of granulated sugar and the zest of half a lemon. Squeeze in a tiny dash of lemon juice if desired.
  4. Gently toss the strawberries with the sugar and lemon until well coated. Let them sit at room temperature for at least 15-20 minutes to macerate.
  5. Preheat your oven to 375°F (190°C).
  6. Slice your baguette on the bias into 1/2-inch thick pieces, aiming for about 16-20 slices.
  7. Arrange the slices in a single layer on a baking sheet. Melt about 2-3 tablespoons of unsalted butter and lightly brush one side of each bread slice.
  8. Bake for 7-10 minutes, or until the bread is golden brown and lightly crisp around the edges. Remove from the oven and let cool slightly.
  9. In a small bowl, combine 8 ounces of mascarpone cheese, 2-3 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth and creamy.
  10. Once the toasted baguette slices have cooled slightly, spread a layer of the mascarpone mixture onto each slice.
  11. Spoon a generous amount of the macerated strawberries and some of their syrup over the mascarpone layer.
  12. Garnish each bruschetta with fresh mint leaves and drizzle with balsamic glaze if using.
  13. Serve immediately to ensure the bread remains crisp.
