Instructions
- Wash about 2 cups of fresh strawberries gently under cool water.
- Hull the strawberries and slice them into uniformly thin pieces, about 1/4 inch thick.
- Place the sliced strawberries in a medium-sized bowl. Add 1-2 tablespoons of granulated sugar and the zest of half a lemon. Squeeze in a tiny dash of lemon juice if desired.
- Gently toss the strawberries with the sugar and lemon until well coated. Let them sit at room temperature for at least 15-20 minutes to macerate.
- Preheat your oven to 375°F (190°C).
- Slice your baguette on the bias into 1/2-inch thick pieces, aiming for about 16-20 slices.
- Arrange the slices in a single layer on a baking sheet. Melt about 2-3 tablespoons of unsalted butter and lightly brush one side of each bread slice.
- Bake for 7-10 minutes, or until the bread is golden brown and lightly crisp around the edges. Remove from the oven and let cool slightly.
- In a small bowl, combine 8 ounces of mascarpone cheese, 2-3 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Mix until smooth and creamy.
- Once the toasted baguette slices have cooled slightly, spread a layer of the mascarpone mixture onto each slice.
- Spoon a generous amount of the macerated strawberries and some of their syrup over the mascarpone layer.
- Garnish each bruschetta with fresh mint leaves and drizzle with balsamic glaze if using.
- Serve immediately to ensure the bread remains crisp.
