- Press the crust mixture into the bottom of mini muffin tins or silicone molds. Make sure to pack it tightly for a sturdy base. Bake in a preheated oven at 350°F (175°C) for about 5 minutes. Allow to cool.
- In a mixing bowl, beat 8 ounces of softened cream cheese until smooth. Gradually add in 1/2 cup of sugar, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice. Mix until creamy and fluffy.
- Fold in 1 cup of finely chopped fresh strawberries into the cheesecake mixture.
- Spoon the cheesecake filling into the cooled crusts, smoothing the tops with a spatula.
- In a small bowl, mix 1/2 cup of crushed cookies with 1/4 cup of strawberry Jell-O powder. Stir until well combined.
- Sprinkle the crunch topping over each cheesecake bite, pressing gently to adhere.
- Refrigerate the bites for at least 2-3 hours, or until set.
- Once set, carefully remove the cheesecake bites from the molds, and enjoy these delightful treats!
