  • 1/2 cup crushed cookies
  • 1/4 cup strawberry Jell-O powder

Instructions

  1. In a bowl, combine 1 cup of crushed graham crackers with 1/4 cup of melted butter and 2 tablespoons of sugar. Mix until the crumbs are evenly coated.
  2. Press the crust mixture into the bottom of mini muffin tins or silicone molds. Make sure to pack it tightly for a sturdy base. Bake in a preheated oven at 350°F (175°C) for about 5 minutes. Allow to cool.
  3. In a mixing bowl, beat 8 ounces of softened cream cheese until smooth. Gradually add in 1/2 cup of sugar, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice. Mix until creamy and fluffy.
  4. Fold in 1 cup of finely chopped fresh strawberries into the cheesecake mixture.
  5. Spoon the cheesecake filling into the cooled crusts, smoothing the tops with a spatula.
  6. In a small bowl, mix 1/2 cup of crushed cookies with 1/4 cup of strawberry Jell-O powder. Stir until well combined.
  7. Sprinkle the crunch topping over each cheesecake bite, pressing gently to adhere.
  8. Refrigerate the bites for at least 2-3 hours, or until set.
