Instructions

  1. In a large pot over medium heat, add chopped beef bacon. Cook until crispy, then remove and set aside, leaving the rendered fat in the pot.
  2. In the same pot, add diced onions, chopped celery, and bell peppers. Sauté for about 5-7 minutes until softened and fragrant. Stir occasionally to prevent sticking.
  3. Stir in minced garlic and cook for an additional minute until fragrant.
  4. Add diced potatoes to the pot, followed by your choice of chicken or vegetable broth. Bring the mixture to a boil, then reduce heat to a simmer.
  5. Add your Cajun seasoning, salt, and pepper. Let it simmer for about 20-25 minutes until the potatoes are tender.
  6. For a creamier texture, you can use an immersion blender to partially blend the soup, leaving some chunks for texture. If you prefer, transfer a portion to a blender and blend until smooth, then return it to the pot.
  7. Stir in the heavy cream and the crispy bacon bits you set aside earlier. Allow the soup to warm through for about 5 minutes.
  8. Taste and adjust seasoning if necessary. Serve hot, garnished with green onions or parsley if desired.
