Ingredients
-
1 can pineapple rings, drained (or 6 fresh pineapple slices)
-
1 cup all-purpose flour
-
1 tablespoon sugar
-
1/2 teaspoon baking powder
-
1/4 teaspoon salt
-
1/4 teaspoon cinnamon
-
1 egg
-
2/3 cup milk
-
1/2 teaspoon vanilla extract
-
Oil for frying (vegetable or canola)
Optional toppings:
-
Powdered sugar
-
Cinnamon sugar mix
-
Vanilla glaze
-
Toasted coconut flakes
Instructions
-
Make the batter: In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. Add in egg, milk, and vanilla extract, and whisk until smooth. Don’t overmix.
-
Heat the oil: Fill a skillet or deep pan with about 1–2 inches of oil. Heat to 350°F (175°C).
-
Prep pineapple: Pat pineapple rings dry with paper towels to help the batter stick.
-
Dip and fry: Dip each pineapple ring into the batter, coating well, then gently lower into hot oil. Fry 2–3 minutes per side until golden brown.
-
Drain and serve: Transfer fritters to a paper towel-lined plate. Dust with powdered sugar or cinnamon sugar while warm. Serve immediately!
Notes
-
Fresh or canned pineapple both work great. Just make sure to dry the rings!
-
For a coconut twist, sub coconut milk for regular milk.
-
To make gluten-free, use a 1:1 gluten-free flour blend.
-
Fritters are best served warm, but leftovers can be crisped in the oven at 350°F for 5 minutes.
