  • 1 cup all-purpose flour

  • 1 tablespoon sugar

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon cinnamon

  • 1 egg

  • 2/3 cup milk

  • 1/2 teaspoon vanilla extract

  • Oil for frying (vegetable or canola)

Optional toppings:

  • Powdered sugar

  • Cinnamon sugar mix

  • Vanilla glaze

  • Toasted coconut flakes


Instructions

  • Make the batter: In a bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. Add in egg, milk, and vanilla extract, and whisk until smooth. Don’t overmix.

  • Heat the oil: Fill a skillet or deep pan with about 1–2 inches of oil. Heat to 350°F (175°C).

  • Prep pineapple: Pat pineapple rings dry with paper towels to help the batter stick.

  • Dip and fry: Dip each pineapple ring into the batter, coating well, then gently lower into hot oil. Fry 2–3 minutes per side until golden brown.

 

  • Drain and serve: Transfer fritters to a paper towel-lined plate. Dust with powdered sugar or cinnamon sugar while warm. Serve immediately!

Notes

  • Fresh or canned pineapple both work great. Just make sure to dry the rings!

  • For a coconut twist, sub coconut milk for regular milk.

  • To make gluten-free, use a 1:1 gluten-free flour blend.

 

  • Fritters are best served warm, but leftovers can be crisped in the oven at 350°F for 5 minutes.
