  • 1 cup creamy peanut butter

  • 2 tablespoons rice vinegar

  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup chicken broth (or water)
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons vegetable oil (for cooking)
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Chopped peanuts (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Cut the chicken into bite-sized pieces (about 1 to 1.5 inches).
  2. Season the chicken pieces with salt and pepper.
  3. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  4. Add the seasoned chicken pieces to the skillet in a single layer. Cook undisturbed for 4-5 minutes until golden brown on one side.
  5. Flip the chicken and cook for another 4-5 minutes until cooked through and no longer pink in the center. Remove from skillet and set aside.
  6. In the same skillet, reduce heat to medium and add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
  7. Add the creamy peanut butter and stir until well combined with the garlic and ginger.
  8. Pour in soy sauce, honey, rice vinegar, and sesame oil. Stir until smooth and creamy.
  9. Gradually add chicken broth (or water) to thin out the sauce. For a thicker sauce, mix cornstarch with a little water and add it to the sauce.
  10. Bring the sauce to a gentle simmer, adding red pepper flakes to taste.
  11. Return the cooked chicken to the skillet and stir to coat evenly with the sauce. Simmer for an additional 2-3 minutes.
  12. Taste the sauce and adjust seasoning if necessary.
  13. Remove from heat and prepare to serve.
