- 1 tablespoon fresh ginger, grated

Instructions
- Cut the chicken into bite-sized pieces (about 1 to 1.5 inches).
- Season the chicken pieces with salt and pepper.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the seasoned chicken pieces to the skillet in a single layer. Cook undisturbed for 4-5 minutes until golden brown on one side.
- Flip the chicken and cook for another 4-5 minutes until cooked through and no longer pink in the center. Remove from skillet and set aside.
- In the same skillet, reduce heat to medium and add minced garlic and grated ginger. Sauté for about 30 seconds until fragrant.
- Add the creamy peanut butter and stir until well combined with the garlic and ginger.
- Pour in soy sauce, honey, rice vinegar, and sesame oil. Stir until smooth and creamy.
- Gradually add chicken broth (or water) to thin out the sauce. For a thicker sauce, mix cornstarch with a little water and add it to the sauce.
- Bring the sauce to a gentle simmer, adding red pepper flakes to taste.
- Return the cooked chicken to the skillet and stir to coat evenly with the sauce. Simmer for an additional 2-3 minutes.
- Taste the sauce and adjust seasoning if necessary.
- Remove from heat and prepare to serve.
- Serve over cooked rice or noodles, drizzling extra sauce on top.
