- 1 cup of panko breadcrumbs
- 1/2 cup of freshly grated Parmesan cheese
- 2 tablespoons of melted butter
- Salt
- Pepper
- 1/2 cup of mayonnaise
- 1 clove of minced garlic
- 1 tablespoon of lemon juice
- Chopped fresh herbs (parsley or dill)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the salmon fillets dry with paper towels.
- In a bowl, combine 1 cup of panko breadcrumbs, 1/2 cup of freshly grated Parmesan cheese, 2 tablespoons of melted butter, and a pinch of salt and pepper. Mix until it’s well combined.
- Place the salmon fillets skin-side down on a baking sheet lined with parchment paper. Press the breadcrumb mixture firmly onto the top of each fillet, covering them generously.
- Transfer the baking sheet to the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
- While the salmon is baking, make the aioli. In a small bowl, whisk together 1/2 cup of mayonnaise, 1 clove of minced garlic, 1 tablespoon of lemon juice, and a pinch of salt. Add chopped fresh herbs if desired.
- Once the salmon is out of the oven, let it rest for a minute. Serve each fillet with a generous dollop of garlic aioli on the side.
