  • 1 cup of panko breadcrumbs
  • 1/2 cup of freshly grated Parmesan cheese
  • 2 tablespoons of melted butter
  • Salt
  • Pepper
  • 1/2 cup of mayonnaise
  • 1 clove of minced garlic
  • 1 tablespoon of lemon juice
  • Chopped fresh herbs (parsley or dill)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillets dry with paper towels.
  3. In a bowl, combine 1 cup of panko breadcrumbs, 1/2 cup of freshly grated Parmesan cheese, 2 tablespoons of melted butter, and a pinch of salt and pepper. Mix until it’s well combined.
  4. Place the salmon fillets skin-side down on a baking sheet lined with parchment paper. Press the breadcrumb mixture firmly onto the top of each fillet, covering them generously.
  5. Transfer the baking sheet to the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and the crust is golden brown.
  6. While the salmon is baking, make the aioli. In a small bowl, whisk together 1/2 cup of mayonnaise, 1 clove of minced garlic, 1 tablespoon of lemon juice, and a pinch of salt. Add chopped fresh herbs if desired.
  7. Once the salmon is out of the oven, let it rest for a minute. Serve each fillet with a generous dollop of garlic aioli on the side.
