  • 2 large eggs
  • 1 cup sour cream
  • 1 cup crushed Oreo cookies (about 8 cookies)
  • 1 cup whipped cream (store-bought or homemade)
  • 4 Oreo cookies, crushed for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine the crushed Oreo cookies, melted butter, and granulated sugar. Mix until the crumbs are well coated and resemble wet sand.
  3. Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
  4. Press the Oreo mixture firmly into the bottom of the prepared baking pan using the back of a measuring cup or your fingers.
  5. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the cheesecake filling.
  6. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy (about 2-3 minutes).
  7. Add the granulated sugar and vanilla extract to the cream cheese, beating until well combined.
  8. Add the eggs one at a time, mixing on low speed after each addition until just combined.
  9. Add the sour cream and mix until smooth.
