- 2 large eggs
- 1 cup sour cream
- 1 cup crushed Oreo cookies (about 8 cookies)
- 1 cup whipped cream (store-bought or homemade)
- 4 Oreo cookies, crushed for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium mixing bowl, combine the crushed Oreo cookies, melted butter, and granulated sugar. Mix until the crumbs are well coated and resemble wet sand.
- Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
- Press the Oreo mixture firmly into the bottom of the prepared baking pan using the back of a measuring cup or your fingers.
- Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while you prepare the cheesecake filling.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy (about 2-3 minutes).
- Add the granulated sugar and vanilla extract to the cream cheese, beating until well combined.
- Add the eggs one at a time, mixing on low speed after each addition until just combined.
- Add the sour cream and mix until smooth.
- Gently fold in the crushed Oreo cookies using a spatula.
- Pour the cheesecake filling over the cooled Oreo crust in the baking pan, spreading it evenly.
- Tap the pan gently on the counter to release any air bubbles.
- Bake the cheesecake bars in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven and crack the oven door open. Let the cheesecake bars cool in the oven for about 1 hour.
- After an hour, remove the cheesecake bars from the oven and let them cool at room temperature for an additional 30 minutes.
- Cover the pan with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or overnight if possible.
- When ready to serve, remove the cheesecake bars from the refrigerator. Use the parchment paper overhang to lift the bars out of the pan and onto a cutting board.
- Top with whipped cream and garnish with crushed Oreo cookies before slicing into bars.
