Press firmly into a 9-inch pie plate. Regardless of which you choose, place the crust in the refrigerator for at least 30 minutes to firm up.
  2. Whip the Cream: In a large, very clean mixing bowl (preferably chilled, along with your whisk attachments!), pour in the cold heavy whipping cream. Add about 1/4 cup of the powdered sugar and the vanilla extract. Beat on medium-high speed until stiff peaks form. Set aside in the fridge while you prepare the peanut butter filling.
  3. Make the Peanut Butter Base: In a separate large mixing bowl, beat the softened cream cheese and the remaining powdered sugar together on medium speed until smooth and creamy, about 2-3 minutes. Add the creamy peanut butter and beat until well combined and fluffy.
  4. Fold in the Whipped Cream: Gently fold about half of your prepared whipped cream into the peanut butter mixture using a rubber spatula. Once mostly combined, fold in the remaining whipped cream until no streaks remain.
  5. Fill the Crust & Chill: Spoon the entire peanut butter filling mixture into your chilled graham cracker crust. Spread it evenly and smooth out the top. Place the pie back into the refrigerator to chill for at least 4-6 hours, or preferably overnight.
