  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 ripe mangoes, peeled and diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil (for cooking)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or noodles (for serving)

Instructions

  1. Wash chicken breasts under cold water and pat dry.
  2. Cut into bite-sized pieces and marinate with 1 tablespoon soy sauce, salt, and pepper for 15-20 minutes.
  3. Slice red and green bell peppers, onion, and prepare minced garlic and grated ginger.
  4. Dice the ripe mangoes.
  5. Whisk together 2 tablespoons soy sauce, honey, and cornstarch in a small bowl and set aside.
  6. Heat 1 tablespoon vegetable oil in a skillet over medium-high heat.
  7. Add marinated chicken in a single layer and cook for 5-7 minutes until golden brown.
  8. Remove chicken from skillet and set aside.
  9. In the same skillet, add more oil if needed and stir-fry onions, bell peppers, garlic, and ginger for 3-4 minutes until tender but crisp.
  10. Return chicken to the skillet and combine.
  11. Gently fold in diced mango and pour the sauce over the mixture.
  12. Cook for an additional 2-3 minutes until the sauce thickens.
  13. Taste and adjust seasoning if necessary.
  14. Garnish with cilantro and serve over rice or noodles.
