- 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 ripe mangoes, peeled and diced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil (for cooking)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Cooked rice or noodles (for serving)
Instructions
- Wash chicken breasts under cold water and pat dry.
- Cut into bite-sized pieces and marinate with 1 tablespoon soy sauce, salt, and pepper for 15-20 minutes.
- Slice red and green bell peppers, onion, and prepare minced garlic and grated ginger.
- Dice the ripe mangoes.
- Whisk together 2 tablespoons soy sauce, honey, and cornstarch in a small bowl and set aside.
- Heat 1 tablespoon vegetable oil in a skillet over medium-high heat.
- Add marinated chicken in a single layer and cook for 5-7 minutes until golden brown.
- Remove chicken from skillet and set aside.
- In the same skillet, add more oil if needed and stir-fry onions, bell peppers, garlic, and ginger for 3-4 minutes until tender but crisp.
- Return chicken to the skillet and combine.
- Gently fold in diced mango and pour the sauce over the mixture.
- Cook for an additional 2-3 minutes until the sauce thickens.
- Taste and adjust seasoning if necessary.
- Garnish with cilantro and serve over rice or noodles.
