This Magic Lemon Cobbler is the dessert that literally flips the script. Ingredients

½ cup unsalted butter (1 stick)

1 cup all-purpose flour

2 tsp baking powder

¼ tsp salt

¾ cup granulated sugar

¾ cup milk

1 tsp vanilla extract

Zest of 1 lemon
For the Lemon Layer:

1 cup granulated sugar

Juice of 2 lemons (about ⅓ cup)

1 cup boiling water
Instructions

Preheat & Melt Butter
Preheat oven to 350°F (175°C). Place butter in an 8×8-inch baking dish and let it melt in the oven while it preheats. -
Make the Batter
In a medium bowl, whisk together flour, baking powder, salt, sugar, milk, vanilla, and lemon zest until smooth. -
Pour the Batter (Do Not Stir!)
Pour the batter over the melted butter in the dish. Do not stir. -
Mix & Add Lemon Layer
In another bowl, combine sugar, fresh lemon juice, and boiling water. Pour this mixture gently over the batter. Still don’t stir! -
Bake the Magic
Bake for 40–45 minutes or until the top is golden and set. The middle will stay soft and pudding-like—just how it’s meant to be. -
Cool Slightly & Serve
Let cool 10–15 minutes before serving. Spoon into bowls and top with powdered sugar or ice cream for extra wow.
