  • ½ cup unsalted butter (1 stick)

  • 1 cup all-purpose flour

  • 2 tsp baking powder

  • ¼ tsp salt

  • ¾ cup granulated sugar

  • ¾ cup milk

  • 1 tsp vanilla extract

  • Zest of 1 lemon

For the Lemon Layer:

  • 1 cup granulated sugar

  • Juice of 2 lemons (about ⅓ cup)

  • 1 cup boiling water


Instructions

  1. Preheat & Melt Butter
    Preheat oven to 350°F (175°C). Place butter in an 8×8-inch baking dish and let it melt in the oven while it preheats.

  2. Make the Batter
    In a medium bowl, whisk together flour, baking powder, salt, sugar, milk, vanilla, and lemon zest until smooth.

  3. Pour the Batter (Do Not Stir!)
    Pour the batter over the melted butter in the dish. Do not stir.

  4. Mix & Add Lemon Layer
    In another bowl, combine sugar, fresh lemon juice, and boiling water. Pour this mixture gently over the batter. Still don’t stir!

  5. Bake the Magic
    Bake for 40–45 minutes or until the top is golden and set. The middle will stay soft and pudding-like—just how it’s meant to be.

  6. Cool Slightly & Serve
    Let cool 10–15 minutes before serving. Spoon into bowls and top with powdered sugar or ice cream for extra wow.

Notes

  • Don’t stir after layering—the magic happens when the oven does all the work.

  • Best enjoyed warm, but leftovers can be refrigerated and gently reheated.

  • For extra zing, add a touch more lemon zest or a drop of lemon extract.
