- 1 pound large shrimp, peeled and deveined
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 4 tablespoons olive oil, divided
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Rinse the shrimp under cold water and pat dry with paper towels.
- Trim the asparagus ends and cut into 2-inch pieces.
- In a large bowl, combine shrimp, minced garlic, lemon zest, lemon juice, red pepper flakes (if using), and a pinch of salt and pepper. Toss to coat and let marinate for 15-20 minutes.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add asparagus and sauté for 4-5 minutes until tender yet crisp. Season with salt and pepper, then remove from skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil. Once heated, add the marinated shrimp along with all the garlic and lemon juice.
- Cook shrimp for 2-3 minutes on one side until golden, then flip and cook for an additional 2-3 minutes until fully cooked and firm.
- Return the sautéed asparagus to the skillet and gently toss to combine.
- Taste and adjust seasoning if necessary.
- Transfer to a serving platter and garnish with chopped parsley. Serve with rice, quinoa, or a light salad.
