Description

These zesty lemon brownies offer a delightful twist on traditional brownies, featuring a rich lemon flavor and a sweet glaze that makes them irresistible. Perfect for a bright and refreshing dessert!

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 2 lemons
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)
  • 1 teaspoon lemon zest (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×13 inch baking dish by greasing it lightly with butter or lining it with parchment paper.
  2. In a large mixing bowl, combine the melted butter and granulated sugar, whisking until smooth.
  3. Add the eggs one at a time, whisking well after each addition. Then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in the fresh lemon juice and lemon zest until well incorporated.
  6. Pour the batter into the prepared baking dish and spread it evenly.
  7. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Allow the brownies to cool in the pan for 10-15 minutes before transferring them to a wire rack to cool completely.
  9. For the glaze, sift the powdered sugar into a small bowl, then mix in the lemon juice and lemon zest until smooth. Adjust the consistency with more lemon juice if necessary.
  10. Once the brownies are completely cool, drizzle the glaze over the top, slice into squares, and serve.
