  • 2 lbs Ground beef
  • 4 oz feta Cheese
  • 1 Egg
  • 2 tbsp Fresh chopped basil
  • 2 tsp Minced Garlic
  • 2 tbsp Beef stock
  • 1 cup Heavy whipping cream
  • 1 tsp Italian seasoning
  • 1/4 cup Chopped green onions
  • 2 tbsp Tomato paste
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine 2 lbs of ground beef, 1 egg, 4 oz of crumbled feta cheese, 2 tbsp of fresh chopped basil, 2 tsp of minced garlic, and salt and pepper to taste. Use your hands to mix everything until well blended, ensuring not to overwork the meat to keep the patties tender.
  2. Form the mixture into 14 equal-sized patties, about ½ inch thick. Press a slight indentation in the center of each patty to help them cook evenly.
  3. Heat a large skillet over medium-high heat. Add the patties to the skillet and cook for about 5-7 minutes on each side, or until they reach your desired level of doneness.
  4. Once cooked, remove the patties from the skillet and set aside on a plate. Drain any excess grease from the pan, but leave the flavorful bits behind.
  5. Lower the heat to medium and add 2 tbsp of beef stock to deglaze the pan. Use a wooden spoon to scrape up the browned bits from the bottom, which will enhance the sauce flavor. Cook for about 1 minute until the stock has reduced slightly.
  6. Whisk in 1 cup of heavy whipping cream, 1 tsp of Italian seasoning, ¼ cup of chopped green onions, and 2 tbsp of tomato paste. Mix until well combined, and bring to a gentle simmer, about 3-5 minutes, allowing it to thicken.
  7. Add salt and pepper to taste, adjusting the seasoning as needed. Cook down the sauce until it has thickened to your desired consistency — this should take about 5-7 minutes.
  8. Carefully place the patties back into the skillet and toss them in the sauce to coat. Allow them to simmer for an additional 2-3 minutes so they soak up the flavors.
  9. Serve the burgers warm, garnished with more freshly chopped green onions if desired.
