  • 1/2 cup Granulated Sugar
  • 1/2 cup Light Brown Sugar
  • 1/2 cup Honey
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 cup Pistachios, roughly chopped
  • Flaky Sea Salt (Optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a light-coloured saucepan, melt the unsalted butter over medium heat. Continue to cook, swirling occasionally until the milk solids turn a beautiful amber-brown color and emit a nutty aroma, about 5-8 minutes. Remove from heat and pour into a large heatproof mixing bowl. Let it cool for about 10-15 minutes.
  3. To the slightly cooled brown butter, add the granulated sugar, light brown sugar, and honey. Whisk vigorously for about 1-2 minutes until well combined. Then, crack in the eggs one at a time, whisking well after each addition. Stir in the vanilla extract until just combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt until evenly distributed.
  5. Gradually add the dry ingredient mixture to the wet ingredient mixture, mixing on low speed or by hand until just combined. A few streaks of flour are fine.
  6. Gently fold in the roughly chopped pistachios until evenly distributed.
  7. Pour the cookie bar batter into the prepared baking pan and spread evenly. If using flaky sea salt, sprinkle it over the top now.
  8. Bake for 25-30 minutes, or until the edges are golden brown and the center is set. A toothpick inserted should come out with moist crumbs.
  9. Once baked, remove from the oven and let cool completely in the pan on a wire rack for at least 1-2 hours.
  10. Once completely cool, lift the bars out using the parchment paper overhang and cut into squares or rectangles.
