Ingredients
Scale
- 2 cups fine-blanched almond flour
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional, but recommended)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup powdered sugar (confectioners' sugar)
- 1/4 cup unsalted butter, softened (for frosting)
- 2–4 tablespoons milk or cream (for frosting)
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch or 9×9-inch baking pan with parchment paper, leaving an overhang on two sides.
- In a large mixing bowl, cream together the softened unsalted butter and granulated sugar on medium speed until light and fluffy, about 2-3 minutes.
- Beat in the large egg until fully incorporated, then stir in the vanilla extract and almond extract if using.
- In a separate medium bowl, whisk together the almond flour, baking powder, and salt.
- With the mixer on low speed, gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
- Transfer the dough to the prepared baking pan and press it evenly into the bottom.
- Bake for 20-25 minutes until the edges are lightly golden brown and the center is set.
- Remove the pan from the oven and let the bars cool completely in the pan on a wire rack.
- In a medium mixing bowl, cream the softened unsalted butter until smooth, then gradually add the powdered sugar, mixing until combined.
- Slowly add the milk or cream and vanilla extract, beating until the frosting is light, fluffy, and spreadable.
- Once the bars are completely cool, lift them out of the pan using the parchment paper overhang and transfer to a cutting board.
- Spread the frosting evenly over the top of the cooled cookie slab and cut into desired bar shapes.
