- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup milk (whole or non-dairy)
- 1/4 cup vegetable oil or melted unsalted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 1/4 cup pure maple syrup (for glaze)
- 1 tablespoon milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease your donut pans.
- In a large mixing bowl, combine all-purpose flour, granulated sugar, pumpkin pie spice, baking powder, baking soda, and salt. Whisk together until well mixed.
- In a separate medium bowl, whisk together pumpkin puree, milk, vegetable oil (or melted butter), eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently mix until just combined, being careful not to overmix.
- Spoon the batter into a piping bag and fill the donut cavities about two-thirds full.
- Bake for 10-12 minutes or until golden brown and springy to the touch.
- Let the donuts cool in the pans for about 5 minutes, then invert onto a wire rack to cool completely.
- In a medium bowl, whisk together powdered sugar, pure maple syrup, 1 tablespoon of milk, and vanilla extract until smooth for the glaze.
- Once the donuts are cool, dip the tops into the glaze or drizzle it over them. Let the glaze set for 15-20 minutes before serving.
