Ingredients

Scale
  • 1 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk (whole or non-dairy)
  • 1/4 cup vegetable oil or melted unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 1/4 cup pure maple syrup (for glaze)
  • 1 tablespoon milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your donut pans.
  2. In a large mixing bowl, combine all-purpose flour, granulated sugar, pumpkin pie spice, baking powder, baking soda, and salt. Whisk together until well mixed.
  3. In a separate medium bowl, whisk together pumpkin puree, milk, vegetable oil (or melted butter), eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently mix until just combined, being careful not to overmix.
  5. Spoon the batter into a piping bag and fill the donut cavities about two-thirds full.
  6. Bake for 10-12 minutes or until golden brown and springy to the touch.
  7. Let the donuts cool in the pans for about 5 minutes, then invert onto a wire rack to cool completely.
  8. In a medium bowl, whisk together powdered sugar, pure maple syrup, 1 tablespoon of milk, and vanilla extract until smooth for the glaze.
  9. Once the donuts are cool, dip the tops into the glaze or drizzle it over them. Let the glaze set for 15-20 minutes before serving.
