Instructions

  1. Preheat your oven to 325°F (160°C). In a medium bowl, combine 1 ½ cups of graham cracker crumbs, ⅓ cup of sugar, and ½ cup of melted butter. Mix until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove and let it cool.
  2. In a large mixing bowl, beat 24 ounces of softened cream cheese and 1 cup of sugar until smooth. Add in 1 cup of sour cream, 1 teaspoon of vanilla extract, and 3 large eggs, one at a time, mixing until just combined. Be careful not to overmix—it should be creamy but not overly aerated.
  3. Gently fold in ½ cup of caramel sauce into the cheesecake filling. Use a spatula to create swirls, but don’t fully mix it in; you want those beautiful caramel ribbons throughout.
  4. Pour the cheesecake filling over the cooled crust. Use a spoon to dollop additional caramel sauce on top, then use a knife or toothpick to create swirls for that signature look.
