- In a large mixing bowl, beat 24 ounces of softened cream cheese and 1 cup of sugar until smooth. Add in 1 cup of sour cream, 1 teaspoon of vanilla extract, and 3 large eggs, one at a time, mixing until just combined. Be careful not to overmix—it should be creamy but not overly aerated.
- Gently fold in ½ cup of caramel sauce into the cheesecake filling. Use a spatula to create swirls, but don’t fully mix it in; you want those beautiful caramel ribbons throughout.
- Pour the cheesecake filling over the cooled crust. Use a spoon to dollop additional caramel sauce on top, then use a knife or toothpick to create swirls for that signature look.
- Place the cheesecake in the preheated oven and bake for 50-60 minutes, or until the edges are set and the center has a slight jiggle. Turn off the oven and leave the cheesecake inside for an hour to cool gradually.
- Remove the cheesecake from the oven, let it cool to room temperature, then refrigerate for at least 4 hours, preferably overnight, to set completely.
