Instructions
- Wash the baby carrots thoroughly under cold running water. If using regular carrots, peel and cut them into sticks about 2-3 inches long. Set aside.
- In a medium saucepan, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and slightly golden. Be careful not to burn the garlic. Pour in the honey and stir well to combine. Let it simmer for 2-3 minutes until the sauce thickens slightly. Season with salt and black pepper to taste.
- In a large skillet, add the prepared carrots and pour the honey garlic butter sauce over them, ensuring they are evenly coated. Turn the heat to medium-high and cover the skillet with a lid. Cook for 5-7 minutes, stirring occasionally. Check for doneness; the carrots should be tender but still have a slight crunch. If needed, cover and cook for an additional 2-3 minutes.
- Once cooked to your liking, remove the skillet from heat. Optionally, drizzle a bit more honey over the top. Transfer the carrots to a serving dish and sprinkle with chopped fresh parsley for garnish. Serve warm as a side dish.
