Instructions

  1. Prepare the Potatoes: Scrub the potatoes clean and chop them into 1-inch chunks. Place the potato chunks in a large pot, cover with cold water by about an inch, and add a generous pinch of salt. Bring to a boil, then reduce the heat and simmer until fork-tender, about 15-20 minutes. Drain and set aside.
  2. Brown the Beef: Heat olive oil or butter in a large, oven-safe skillet over medium-high heat. Add the ground beef, breaking it up with a spoon, and cook until fully browned. Drain excess grease and transfer the beef to a separate bowl.
  3. Sauté the Vegetables: In the same skillet, reduce heat to medium and add the diced onion and bell pepper. Cook for 5-7 minutes until softened. Stir in smoked paprika, garlic powder, onion powder, salt, and black pepper, cooking for another minute.
  4. Create the 'Mud Potatoes': Add the drained potato chunks back into the skillet. Using a potato masher, gently smash and roughly mash the potatoes. Stir in the cooked ground beef and press the mixture evenly into the skillet. Cook undisturbed for 5-7 minutes to develop a golden-brown crust.
