Description
This Hearty Garlic Potato Soup with Beef Bacon is a warm and comforting dish that combines rich flavors of beef bacon and aromatic garlic. Perfect for chilly evenings, this creamy soup is sure to become a favorite in your home.
Ingredients
- Yukon Gold potatoes (or Russets, or cauliflower for a low-carb option)
- Beef bacon (or turkey bacon as a lighter alternative)
- Fresh garlic (or garlic powder in a pinch)
- Beef broth (or vegetable broth or chicken broth for a lighter flavor)
- Heavy cream (or half-and-half or coconut milk for a dairy-free version)
- Fresh thyme or parsley (or dried herbs used sparingly)
Instructions
- In a large pot over medium heat, cook the beef bacon until crispy, about 5-7 minutes. Remove the bacon and set it aside, leaving the rendered fat in the pot.
- In the same pot, add minced garlic to the bacon fat and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
- Peel and dice your potatoes, then add them to the pot. Stir them around to coat them in the garlic and fat mixture.
- Add your beef broth to the pot, ensuring the potatoes are submerged. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
- Once the potatoes are soft, use an immersion blender to puree the soup to your desired consistency. For a chunkier soup, blend just half of it and leave the rest as is.
- Stir in the heavy cream, and season with salt, pepper, and fresh herbs. Let it simmer for another 5 minutes to meld the flavors.
- Crumble the cooked beef bacon and sprinkle it on top of the soup just before serving.

Keywords: Consider topping your soup with additional fresh herbs, a drizzle of olive oil, or grated cheese for extra flavor. You can reduce the amount of heavy cream or substitute with Greek yogurt for a lighter version. For a kick, add red pepper flakes or hot sauce when blending the soup.
