Ingredients
- Chicken Breast
- Taco Seasoning
- Taco Shells
- Bell Peppers
- Onions
- Tomatoes
- Reduced-Fat Cheese
- Avocado
- Greek Yogurt
- Fresh Cilantro
- Olive Oil
- Water or Low-Sodium Chicken Broth
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, add a splash of olive oil. Once hot, add diced chicken breast and cook until browned, about 5-7 minutes. Stir occasionally to prevent sticking.
- Once the chicken is cooked through, sprinkle your taco seasoning over the chicken. Add a splash of water (or low-sodium chicken broth) to help the spices adhere. Stir well and let it simmer for another 2-3 minutes.
- While the chicken is simmering, arrange taco shells in a baking dish. Make sure they are sturdy enough to hold the filling.
- Spoon the seasoned chicken mixture into each taco shell, filling them generously but not overstuffing.
- Top the chicken with diced bell peppers, onions, and a sprinkle of cheese, if using.
- Place the filled taco shells in the preheated oven and bake for about 10-12 minutes, or until the shells are crisp and the cheese is melted.
- While the tacos bake, chop up your desired toppings like avocado, cilantro, and any other veggies you like.
- Once the tacos are out of the oven, let them cool slightly before serving. Top with your favorite toppings and enjoy!
