- 6 cups Golden Grahams cereal
- 1 cup mini marshmallows
- 1 cup semi-sweet chocolate chips
- 1/2 cup unsalted butter (1 stick)
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup additional mini marshmallows (for topping)
- 1/2 cup additional chocolate chips (for topping)
Instructions
- In a large saucepan, melt the butter over medium heat, ensuring it doesn’t burn.
- Once melted, add the creamy peanut butter and stir continuously until smooth.
- Mix in the powdered sugar and vanilla extract until a thick, creamy consistency forms.
- Remove from heat and let cool for a minute to prevent melting the marshmallows.
- Fold in the mini marshmallows and chocolate chips until evenly distributed.
- In a large mixing bowl, add the Golden Grahams cereal and pour the peanut butter mixture over it. Gently fold until the cereal is well coated.
- Line a 9×13 inch baking dish with parchment paper, leaving overhang for easy removal.
- Transfer the cereal mixture into the dish and press firmly with a spatula or damp hands to compact it evenly.
- Sprinkle the additional mini marshmallows and chocolate chips on top, pressing them into the surface.
- Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 1 hour to firm up.
- After an hour, lift the bars out using the parchment paper overhang and place on a cutting board. Cut into squares or rectangles.
