  • 1 cup mini marshmallows
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup additional mini marshmallows (for topping)
  • 1/2 cup additional chocolate chips (for topping)

Instructions

  1. In a large saucepan, melt the butter over medium heat, ensuring it doesn’t burn.
  2. Once melted, add the creamy peanut butter and stir continuously until smooth.
  3. Mix in the powdered sugar and vanilla extract until a thick, creamy consistency forms.
  4. Remove from heat and let cool for a minute to prevent melting the marshmallows.
  5. Fold in the mini marshmallows and chocolate chips until evenly distributed.
  6. In a large mixing bowl, add the Golden Grahams cereal and pour the peanut butter mixture over it. Gently fold until the cereal is well coated.
  7. Line a 9×13 inch baking dish with parchment paper, leaving overhang for easy removal.
  8. Transfer the cereal mixture into the dish and press firmly with a spatula or damp hands to compact it evenly.
  9. Sprinkle the additional mini marshmallows and chocolate chips on top, pressing them into the surface.
  10. Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 1 hour to firm up.
  11. After an hour, lift the bars out using the parchment paper overhang and place on a cutting board. Cut into squares or rectangles.
