Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal later.
  2. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk them together until the mixture is smooth and well combined (about 2-3 minutes).
  3. Add the eggs, one at a time, to the sugar mixture, whisking well after each addition to incorporate air into the batter.
  4. Stir in the vanilla extract until well blended.
  5. In a separate bowl, sift together the all-purpose flour, cocoa powder, ground ginger, ground cinnamon, ground nutmeg, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, folding them in gently with a spatula or wooden spoon until just combined. Avoid overmixing.
  7. If using chocolate chips, fold them into the batter now.
  8. Pour the brownie batter into the prepared baking pan, spreading it evenly with a spatula.
  9. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  10. Remove the brownies from the oven and let them cool in the pan for about 10-15 minutes.
  11. Carefully lift the brownies out of the pan using the parchment paper or cut them directly in the pan.
  12. Cut the brownies into squares or rectangles, aiming for about 24 pieces.
  13. Dust the top with powdered sugar if desired.
