Ingredients

Scale
  • 1/2 cup Japanese mayonnaise (or good quality regular mayonnaise)
  • 24 tablespoons Sriracha (adjust to your heat preference)
  • 1/2 teaspoon non-alcoholic mirin style seasoning (optional, for a hint of sweetness)
  • 1/2 teaspoon fresh lime juice (optional, for brightness)
  • 1/2 cup soy sauce (low sodium if preferred)
  • 1/2 cup non-alcoholic mirin style seasoning
  • 1/4 cup granulated sugar (or brown sugar for deeper flavor)
  • 1 tablespoon rice vinegar
  • 1/4 cup fresh citrus juice (lemon, lime, or a mix)
  • 2 tablespoons non-alcoholic mirin style seasoning
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon granulated sugar (optional, to balance tartness)
  • 1/2 cup soy sauce
  • 2 tablespoons non-alcoholic mirin style seasoning
  • 1 tablespoon rice vinegar
  • 1 tablespoon water or unsalted vegetable broth
  • 1 clove garlic, minced very fine or grated
  • 1/2 teaspoon toasted sesame oil
  • Pinch of red pepper flakes (optional, for a subtle heat)

Instructions

  1. In a small bowl, combine the mayonnaise, Sriracha, non-alcoholic mirin style seasoning, and lime juice. Whisk until completely smooth and well combined. Taste and adjust the Sriracha or lime juice as needed.
  2. In a small saucepan, combine the soy sauce, non-alcoholic mirin style seasoning, sugar, and rice vinegar. Bring the mixture to a gentle simmer over medium heat, stirring occasionally to dissolve the sugar. Once simmering, reduce the heat to low and continue to cook for 10-15 minutes, or until the sauce has thickened slightly and coats the back of a spoon. Remove from heat and let it cool completely before using.
  3. In a small bowl, whisk together the soy sauce, fresh citrus juice, non-alcoholic mirin style seasoning, rice vinegar, grated ginger, and optional sugar until the sugar is dissolved. Let the sauce sit for at least 15 minutes before serving.
  4. In a small bowl, whisk together all the ingredients until well combined. Allow the sauce to sit at room temperature for at least 30 minutes before serving, or refrigerate it for a few hours.
