  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch (or all-purpose flour)
  • Lemon juice (optional but recommended)
  • 1 cup powdered sugar
  • 12 tablespoons milk (or cream/apple cider)
  • 1 teaspoon vanilla extract
  • Pinch of cinnamon (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line two large baking sheets with parchment paper.
  2. In a medium saucepan, combine the finely diced apples, granulated sugar, brown sugar, ground cinnamon, and cornstarch (or flour). If using, add lemon juice. Stir until apples are coated and cook over medium heat for 5-7 minutes until softened and thickened.
  3. Unroll the refrigerated pie crusts onto a lightly floured surface and cut each round into approximately 3-4 rectangular pieces, aiming for about 12-16 rectangles total.
  4. On half of the dough rectangles, spoon about 1-2 tablespoons of the cooled apple filling, leaving a small border around the edges. Brush edges with egg wash or water, then place a plain dough rectangle on top and press down to seal. Crimp edges with a fork.
  5. Transfer the assembled pop tarts to the prepared baking sheets. Poke 2-3 small holes in the top of each pop tart to allow steam to escape. Brush tops with egg wash if desired. Bake for 15-20 minutes until golden brown and flaky.
  6. While the pop tarts cool, whisk together the powdered sugar, milk (or apple cider), and vanilla extract until smooth. Drizzle the glaze over the cooled pop tarts and sprinkle with cinnamon if desired. Let the glaze set for 10-15 minutes before serving.
