Instructions

  2. In the same skillet, add a bit more oil if needed and toss in your diced onions and bell peppers. Sauté for about 3-4 minutes until they’re softened. If you’re using mushrooms or spinach, add them in at this stage.
  3. In a bowl, crack 3-4 eggs and whisk them until well combined. Season with salt, pepper, and any additional spices you prefer.
  4. Pour the beaten eggs into the skillet over the sautéed vegetables. Let it cook undisturbed for about 2-3 minutes until the edges start to set. Gently lift the edges with a spatula, allowing uncooked egg to flow to the edges.
  5. Once the omelet is mostly set, add a layer of crispy hash browns, your choice of cooked beef, and a generous handful of cheese on one half of the omelet.
  6. Carefully fold the other half of the omelet over the fillings. Let it cook for another minute or so until the cheese is melted and the eggs are fully cooked through. Slide the omelet onto a plate and serve hot.
