Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large bowl, gently combine sliced ripe bananas, 1/2 cup of granulated sugar, 1/4 cup of packed brown sugar, 2 tablespoons of all-purpose flour, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and a pinch of ground nutmeg. Stir gently and pour the mixture into the prepared baking dish.
- In a separate medium bowl, whisk together 1 1/2 cups of all-purpose flour, 1/4 cup of granulated sugar, 1 tablespoon of baking powder, and 1/4 teaspoon of salt.
- Cut 1/2 cup of cold unsalted butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.
- Pour in 1/2 cup of milk and 1 teaspoon of vanilla extract to the flour and butter mixture. Stir gently until just combined.
- Spoon dollops of the cobbler topping over the banana filling in your baking dish, leaving some gaps for the filling to bubble up.
- Bake for 30-35 minutes, or until the topping is golden brown and the banana filling is bubbly around the edges.
