Ingredients

  • Medium or large shrimp
  • Corn tortillas or flour tortillas
  • Monterey Jack cheese
  • Cheddar cheese
  • Crema or sour cream
  • Greek yogurt (optional substitute for crema or sour cream)
  • Freshly squeezed lime juice
  • Bottled lime juice (if limes are out of season)
  • Cumin
  • Garlic powder
  • Chili powder
  • Salt
  • Butter
  • Lime zest
  • Chopped cilantro (for garnish)
  • Lime wedges (for garnish)

Instructions

  1. In a skillet over medium heat, melt a tablespoon of butter. Add minced garlic and sauté for about 30 seconds until fragrant. Toss in the shrimp, sprinkle with cumin, chili powder, and salt. Cook for about 3-5 minutes until the shrimp turn pink and opaque. Remove from heat and set aside.
  2. In a mixing bowl, combine sour cream (or Greek yogurt), lime juice, lime zest, and a pinch of salt. Stir well until smooth. Adjust the seasoning to taste and set aside.
  3. Preheat your oven to 350°F (175°C). Take a tortilla and place a portion of the shrimp mixture in the center. Sprinkle some cheese on top and roll the tortilla tightly. Place it seam-side down in a greased baking dish. Repeat this process for all tortillas.
  4. Once all the enchiladas are in the dish, pour the creamy lime sauce evenly over them. Sprinkle additional cheese on top for that gooey goodness.
  5. Cover the baking dish with aluminum foil and bake for about 20 minutes. Then, uncover and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.
  6. Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro and lime wedges before serving.
