- 4 slices of sourdough bread (or your preferred bread)
- 4 oz (113g) feta cheese, crumbled
- 1 cup roasted red peppers, sliced (jarred or homemade)
- 2 cups shredded mozzarella cheese (or a cheese of your choice)
- 2 tablespoons unsalted butter, softened
- 1 tablespoon olive oil
- 1 teaspoon dried oregano (optional)
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Start by heating a large skillet over medium heat for about 2 minutes. You want the skillet hot enough to toast the bread but not so hot that it burns.
- While the skillet is heating, spread 1 tablespoon of softened butter on one side of each slice of sourdough bread.
- After buttering, lay two slices of bread butter-side down in the skillet.
- Next, layer half of the shredded mozzarella cheese evenly over the bread in the skillet, followed by the crumbled feta and roasted red peppers. Then, sprinkle the remaining mozzarella on top.
- Top with the other two slices of bread, butter-side up. Gently press down to help everything stick together. Cook for about 4-5 minutes, or until the bottom bread is golden brown.
- Once the bottom is perfectly toasted, carefully flip the sandwich using a spatula. Cook for another 4-5 minutes until the second side is golden brown and the cheese is fully melted.
- Once done, remove the sandwich from the skillet and let it sit for about 1-2 minutes before slicing.
