- 1 cup mayonnaise
- 2 teaspoons Dijon mustard

Instructions
- Cook the Eggs: Place the 8 large eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, turn off the heat, cover the pot, and let the eggs sit for 10–12 minutes.
- Cool and Chop: After the eggs have sat, drain the hot water and cool them under cold running water. Once cool, peel and chop the eggs into small pieces.
- Mix the Base: In a medium mixing bowl, combine 1 cup of mayonnaise, 2 teaspoons of Dijon mustard, 1 teaspoon of hot sauce (if using), 1 teaspoon of paprika, 1/2 teaspoon of garlic powder, and 1/2 teaspoon of onion powder. Season with salt and black pepper to taste. Stir until well combined.
- Incorporate the Eggs: Gently fold the chopped eggs into the mayonnaise mixture until well coated.
- Add Cheese & Bacon: Mix in 1 cup of shredded sharp cheddar cheese and half of the crumbled bacon (2 slices), stirring until evenly distributed.
- Bake: Preheat your oven to 350°F (175°C). Spread the egg mixture evenly into a greased baking dish. Bake uncovered for 15–20 minutes, until the dip is hot and bubbly.
- Garnish & Serve: Once baked, remove the dip from the oven and sprinkle with the remaining bacon, the chopped green onions, and a pinch of paprika. Serve warm with your choice of crackers, chips, or toasted bread slices.
