Instructions
- In a large mixing bowl, combine 1 cup of cornmeal, 1/2 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk until well blended.
- In another bowl, whisk together 1 cup of milk, 1/4 cup of honey, 2 tablespoons of melted butter, and 1 egg until smooth.
- Pour the wet ingredients into the dry ingredients. Gently fold until just combined. Be careful not to overmix. Then, fold in 1 cup of sweet corn.
- In a large skillet, add enough oil (about 1/2 inch deep) and heat over medium-high heat until shimmering. You can use vegetable oil or canola oil for frying.
- Using a tablespoon, drop batter into the hot oil, flattening slightly with the back of the spoon. Fry in batches, being sure not to overcrowd the pan. Cook for 2-3 minutes on each side, or until golden brown.
- Using a slotted spoon, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- In a small bowl, mix together 1/4 cup of softened butter and 2 tablespoons of honey until well incorporated. This will be the perfect topping for your fritters!
