Instructions

  1. In a large mixing bowl, combine 1 cup of cornmeal, 1/2 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt. Whisk until well blended.
  2. In another bowl, whisk together 1 cup of milk, 1/4 cup of honey, 2 tablespoons of melted butter, and 1 egg until smooth.
  3. Pour the wet ingredients into the dry ingredients. Gently fold until just combined. Be careful not to overmix. Then, fold in 1 cup of sweet corn.
  4. In a large skillet, add enough oil (about 1/2 inch deep) and heat over medium-high heat until shimmering. You can use vegetable oil or canola oil for frying.
