Instructions

  1. Pat the chicken thighs or breasts thoroughly dry with paper towels. Season generously on both sides with salt, black pepper, and a pinch of dried oregano or paprika if desired.
  2. Heat a large, oven-safe skillet over medium-high heat. Add a tablespoon of olive oil. Once shimmering, place the chicken into the hot skillet in a single layer. Sear for about 4-5 minutes per side until deeply golden brown. Remove the seared chicken from the skillet and set aside.
  3. Reduce the heat to medium. If the pan looks dry, add another drizzle of olive oil. Add the finely diced onion to the skillet and sauté for about 3-5 minutes until it softens and becomes translucent. Add the minced garlic and cook for 30-60 seconds until fragrant.
  4. Pour in about half a cup of chicken broth. Use a wooden spoon to scrape up the browned bits from the bottom of the pan. Let it simmer for a minute or two until slightly reduced.
  5. In a small bowl, whisk together the full-fat Greek yogurt with the remaining half cup of chicken broth. This helps to temper the yogurt and makes it less likely to curdle when added to the hot skillet.
  6. Reduce the heat under the skillet to low. Slowly pour the tempered Greek yogurt mixture into the skillet, stirring constantly until well combined and just beginning to warm through. Do not let the sauce come to a rolling boil.
  7. Carefully nestle the seared chicken pieces back into the creamy sauce in the skillet. Spoon some of the sauce over the chicken. Cover the skillet or transfer it to a preheated oven at 375°F (190°C) to finish cooking. Simmer gently on the stovetop for 10-15 minutes or bake for 15-20 minutes until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove the skillet from the heat. Stir in the fresh lemon juice and chopped fresh dill and parsley. Taste and adjust seasoning with additional salt and pepper if needed. Serve immediately with the creamy sauce.
