Ingredients

  • Boneless, skinless chicken breasts
  • Fresh broccoli
  • Cowboy Butter
  • Fresh lemon juice
  • Lemon zest

  • Pepper
  • Minced garlic
  • Red pepper flakes (optional)

Instructions

  1. Begin by bringing a large pot of salted water to a boil. Add the bowtie pasta and cook according to the package instructions until al dente. Reserve a cup of pasta water, then drain the pasta and set it aside.
  2. While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet over medium heat, melt a tablespoon of cowboy butter. Add the chicken breasts and cook for about 6-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and let it rest.
  3. In the same skillet, add a little more cowboy butter if needed, then toss in the broccoli. Sauté for about 4-5 minutes until the broccoli is tender and bright green. You can add a splash of water to help steam the broccoli if necessary.
