- 2 teaspoons of baking powder
- 1 teaspoon of cinnamon
- ½ cup of granulated sugar
- 2 cups of apples (peeled, cored, and diced)
- 1 large egg
- 1 cup of whole milk
- 1 teaspoon of vanilla extract
- melted butter or coconut oil (for a dairy-free option)
Instructions
- Preheat your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- In a large bowl, combine 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of cinnamon, and ½ cup of granulated sugar. Whisk them together until well mixed.
- Peel, core, and dice 2 cups of apples.
- In another bowl, whisk together 1 large egg, 1 cup of milk, and 1 teaspoon of vanilla extract. If using melted butter or coconut oil, add it to this mixture as well.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined.
- Gently fold in the diced apples until they are evenly distributed throughout the batter.
- Use a spoon or ice cream scoop to drop batter onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake the fritters in the preheated oven for 15-20 minutes, or until they are golden brown and a toothpick inserted into the center comes out clean.
- Allow the fritters to cool slightly before serving. You can dust them with powdered sugar or drizzle with a simple glaze made from powdered sugar and milk if desired.
