  • 2 ½ cups water
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 salmon fillets (about 6 ounces each)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 1 tablespoon sesame seeds
  • 2 green onions, chopped
  • Wasabi and pickled ginger (for serving)

Instructions

  1. Rinse the sushi rice under cold water in a fine-mesh strainer until the water runs clear, about 3-4 times.
  2. In a medium saucepan, combine the rinsed rice and 2 ½ cups of water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes without lifting the lid.
  3. Mix rice vinegar, sugar, and salt in a small bowl. Microwave for about 30 seconds until the sugar dissolves. Once the rice is done, let it sit covered for another 10 minutes. Transfer to a large bowl and gently fold in the vinegar mixture.
  4. Whisk together soy sauce, sesame oil, garlic powder, and black pepper. Place salmon fillets in a shallow dish and pour the marinade over them. Let marinate for at least 15 minutes.
  5. Preheat your oven to 400°F (200°C).
  6. Line a baking sheet with parchment paper or grease it with olive oil.
  7. Place marinated salmon fillets on the baking sheet, skin-side down. Bake for 12-15 minutes, or until the salmon flakes easily. Broil for the last 2-3 minutes for a crispy top if desired.
  8. Slice the avocado and cucumber into thin wedges and rounds, respectively.
  9. Fluff the rice with a fork to separate the grains.
  10. Scoop seasoned sushi rice onto a plate, creating a slight indentation in the center.
  11. Place a piece of baked salmon on top of the rice and drizzle with any leftover marinade if desired.
  12. Top with sliced avocado and cucumber, then sprinkle with sesame seeds and chopped green onions.
  13. Serve with wasabi and pickled ginger on the side.
  14. Dig in with chopsticks or a fork and savor the combination of flavors.
