  • 2 large eggs
  • 1 teaspoon of garlic powder

  • 1 teaspoon of smoked paprika
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of cayenne pepper (optional, for heat)
  • 1/2 cup of mayonnaise
  • 2 tablespoons of sweet chili sauce
  • 1 tablespoon of sriracha (adjust to taste)
  • 1 tablespoon of lime juice
  • Fresh cilantro, chopped (for garnish)
  • Vegetable oil (for frying)

Instructions

  1. Cut the salmon fillet into 1-inch cubes and pat dry with paper towels.
  2. In a shallow bowl, mix flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. In a second bowl, whisk the eggs. In a third bowl, place the panko breadcrumbs.
  3. Coat each salmon piece in the flour mixture, dip in the eggs, and roll in the panko breadcrumbs. Ensure the breadcrumbs stick well.
  4. Heat vegetable oil in a large skillet over medium-high heat. Once hot, fry the salmon bites in batches for 3-4 minutes on each side until golden brown. Transfer to a paper towel-lined plate to drain excess oil.
  5. In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust sriracha for desired heat.
  6. Arrange the fried salmon bites on a platter, drizzle with Bang Bang sauce or serve on the side, and garnish with chopped cilantro.
