- 1 pound of fresh salmon fillet, skin removed
- 1 cup of panko breadcrumbs
- 1/2 cup of all-purpose flour
- 2 large eggs
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of cayenne pepper (optional, for heat)
- 1/2 cup of mayonnaise
- 2 tablespoons of sweet chili sauce
- 1 tablespoon of sriracha (adjust to taste)
- 1 tablespoon of lime juice
- Fresh cilantro, chopped (for garnish)
- Vegetable oil (for frying)
Instructions
- Cut the salmon fillet into 1-inch cubes and pat dry with paper towels.
- In a shallow bowl, mix flour, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. In a second bowl, whisk the eggs. In a third bowl, place the panko breadcrumbs.
- Coat each salmon piece in the flour mixture, dip in the eggs, and roll in the panko breadcrumbs. Ensure the breadcrumbs stick well.
- Heat vegetable oil in a large skillet over medium-high heat. Once hot, fry the salmon bites in batches for 3-4 minutes on each side until golden brown. Transfer to a paper towel-lined plate to drain excess oil.
- In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust sriracha for desired heat.
- Arrange the fried salmon bites on a platter, drizzle with Bang Bang sauce or serve on the side, and garnish with chopped cilantro.
Notes
- For a spicier kick, increase the amount of sriracha in the sauce.
- Serve with lime wedges for an extra burst of flavor.
