Ingredients
- Fresh Salmon Fillets

Instructions
- First, take your salmon fillets and pat them very, very dry with paper towels.
- Carefully cut the salmon into roughly 1-inch bite-sized cubes.
- In a medium bowl, toss the salmon cubes with a drizzle of olive oil.
- In a separate shallow bowl or a Ziploc bag, combine the cornstarch, all-purpose flour, garlic powder, onion powder, salt, and black pepper. Whisk or shake until well combined.
- Add the salmon cubes to the bowl or bag with the coating mixture.
- Gently toss or shake until each piece of salmon is evenly coated.
- Preheat your air fryer to 400°F (200°C) or your oven to 425°F (220°C).
- Lightly spray the air fryer basket or a wire rack with cooking oil.
- Arrange the coated salmon bites in a single layer, making sure not to overcrowd it.
- Lightly spray the tops of the salmon bites with cooking oil.
- Air fry for 8-12 minutes or bake for 12-18 minutes, flipping halfway through, until the salmon is golden brown, crispy, and cooked through.
- While the salmon is cooking, in a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and fresh lime juice until smooth and creamy.
