Ingredients

Scale
  • 6 ripe bananas
  • 1/2 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter
  • 3/4 cup whole milk (or buttermilk)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a 9×13-inch baking dish with non-stick cooking spray or grease it with butter.
  2. In a large bowl, gently mash about half of the sliced ripe bananas with a fork, leaving some chunks for texture. Add the remaining banana slices, granulated sugar, ground cinnamon, nutmeg, all-purpose flour, and vanilla extract. Stir gently until the bananas are well coated, then pour the mixture into the prepared baking dish.
  3. In a separate medium bowl, whisk together the remaining all-purpose flour, granulated sugar, baking powder, and a pinch of salt. Cut the cold butter into small cubes and add to the dry ingredients. Using your fingertips or a pastry blender, cut the butter into the mixture until it resembles coarse crumbs. Gradually pour in the milk (or buttermilk), stirring gently until just combined.
  4. Spoon dollops of the cobbler topping evenly over the banana filling in the baking dish. Sprinkle a tablespoon or two of granulated sugar over the top if desired.
  5. Bake for approximately 35-45 minutes, or until the topping is golden brown and a skewer inserted into the topping comes out clean. The banana filling should be bubbly around the edges.
  6. Let the cobbler rest for at least 15-20 minutes before serving warm.
