Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup granulated sugar
  • 1/2 cup whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced (preferably Granny Smith)
  • 1/4 cup unsalted butter, melted
  • Vegetable oil for frying
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1 teaspoon ground cinnamon (for glaze)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, salt, ground cinnamon, nutmeg, and granulated sugar. Whisk until well blended.
  2. In a separate bowl, whisk together the whole milk, egg, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold together using a spatula or wooden spoon. Do not overmix; a few lumps are okay.
  4. Add the diced apples to the batter and gently fold them in until evenly distributed.
  5. Let the batter rest for about 10 minutes.
  6. Heat vegetable oil in a deep frying pan or heavy-bottomed pot to 350°F (175°C).
  7. Use a small cookie scoop or tablespoon to drop spoonfuls of batter into the hot oil, frying about 4-5 fritter bites at a time.
  8. Fry for 2-3 minutes on each side until golden brown, flipping halfway through.
  9. Remove fritter bites from the oil and place on a plate lined with paper towels to drain excess oil.
  10. Continue frying the remaining batter, maintaining the oil temperature.
  11. In a medium bowl, combine powdered sugar, milk, and ground cinnamon. Whisk until smooth. Adjust consistency with more milk if needed.
  12. Dip fritter bites into the glaze or drizzle it over the top.
  13. Dip each fritter bite into the glaze, allowing excess to drip off before placing on a wire rack or plate.

Notes

  • For a more decorative touch, you can sprinkle additional cinnamon or chopped nuts on top of the glazed fritters.
  • Ensure the oil temperature remains consistent to avoid greasy fritters.
