Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup fresh raspberries (or frozen, thawed and drained)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy (about 3-4 minutes).
  3. Mix in the eggs and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined.
  6. Gently fold in the semi-sweet chocolate chips.
  7. Fold in the fresh raspberries carefully to keep some whole.
  8. Line two baking sheets with parchment paper.
  9. Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  10. Bake for 10-12 minutes until set around the edges but soft in the center.
  11. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  12. Optionally, dust cooled cookies with powdered sugar before serving.
  13. Enjoy fresh or store in an airtight container for up to a week. They also freeze well.

Notes

  • Ensure butter and eggs are at room temperature for better mixing.
  • Avoid overmixing to keep cookies tender.
  • Chilling the dough for 30 minutes can help maintain shape and enhance flavors.
  • Feel free to experiment with additional mix-ins like nuts or different types of chocolate.
